    • light brown sugar
    • granulated sugar
    • egg
    • vanilla extract
    • pumpkin puree
    • all purpose flour
    • salt
    • baking soda
    • cinnamon
    • pumpkin pie spice
    • white chocolate chips

    Substitutions

    • Not a fan of white chocolate chips? These cookies are every bit as delicious with dark or milk chocolate chips. 
    • You can also use caramel or butterscotch chips for a completely different flavor from the white chocolate!   
    • If you're using salted butter, reduce the added salt so your cookies don't turn out too salty.
    • No light brown sugar? Use dark brown sugar as a substitute. 
    • Don't have pumpkin pie spice in your pantry? Make your own pumpkin pie spice with just cinnamon, ginger, nutmeg, cloves and all-spice.

    How To Make White Chocolate Chip Pumpkin Cookies

    Step 1: Preheat the oven to 375 degrees Fahrenheit.

    Step 2: Beat the softened butter in a large mixing bowl. Next, add the brown sugar, granulated sugar, egg, vanilla, and pumpkin puree. Mix the ingredients until well combined, then set aside.

    Step 3: In a medium mixing bowl, whisk together all-purpose flour, salt, baking soda, cinnamon, and pumpkin pie spice.

    Step 4: Slowly add the dry ingredients to the wet ingredients. Mix until everything is combined and you have a good cookie dough texture.

    Step 5: Fold in the white chocolate chips, then move the dough to the fridge. Chill for 30 minutes.

    Step 6: After chilling, use a 1-½-inch cookie scoop to scoop the dough onto a prepared baking sheet.

    Step 7: Bake the cookies for 12-14 minutes, then remove from the oven. Allow the cookies to cool on the baking sheet for 1-2 minutes, then move them to a baking rack to finish cooling completely. Enjoy!

    Storage instructions

    Keep these tasty cookies in a cookie jar or airtight container at room temperature, and they'll stay fresh for up to five days.

    You can also freeze them for a few months. Just be sure they're thoroughly cooled before freezing. Place them on a baking sheet and freeze for about an hour before transferring them to a freezer-safe bag.

    Can I add other mix-ins to these soft pumpkin cookies?

    You definitely can! Chopped walnuts or pecans add a great crunch, and raisins or other dried fruits bring a pop of tartness.

    Can I save leftover cookie dough?

    Yes! If you've made a large batch or want to bake fresh cookies in smaller quantities over time, leftover dough can be stored in the refrigerator for a few days or frozen for up to a few months. Just wrap the dough tightly in plastic wrap or store in an airtight container.

    Now you can bake fresh pumpkin white chocolate chip cookies whenever you want, without having to go through the entire process of making the dough again.

    Tips

    • Make sure you're adding canned pumpkin puree and not pumpkin pie filling! We don't want the pie filling because it already has spices and sugar. 
    • Speaking of pumpkin puree, if it seems too runny or moist, drain it or remove any excess moisture by blotting it with a paper towel. Having the puree too wet can affect the texture of the cookies. 
    • Feel free to press some extra chocolate chips on top of the cookies before baking them. They will add more chocolate flavors and make your cookies look extra pretty. 
    • Don't skip chilling the dough-this step is key to making sure your cookies hold their shape and stay chewy.
    • Be careful not to over bake your cookies. Near the end of the baking time, check if they've developed a light brown rim around the edges. That's how you'll know they're done!
