How to make this apple cinnamon muffin recipe
Step 1- Preheat the oven to 425 and line a muffin tin with muffin wrappers.
Step 2- Place flour, baking soda, baking powder, salt and ground cinnamon in a large bowl and stir with a whisk to mix well
Step 3- In a large bowl using an electric mixer or in the bowl of a stand mixer mix together melted butter, sugar and eggs. Mix on low/ medium speed until completely mixed
Step 4- Add half of the dry ingredients to the wet ingredients and stir together using a wooden spoon.
Step 5- Add in the shredded apples and fold in until well distributed.
Step 6- Mix in the remaining flour mixture. This muffin batter is very thick so make sure to mix thoroughly.
Step 7- Fold in the diced apples and stir until they are well distributed. Set the muffin batter aside while you make the crumb topping.
Step 8- Make the cinnamon crumb topping- Place brown sugar, flour, room temperature butter and cinnamon in a medium bowl.
Step 7- Using a fork or pastry cutter blend the topping ingredients together until they are crumbly.
Step 8- Scoop the muffin batter into the prepared muffin pan, fill them about ¾ full.
Step 9- Sprinkle the crumb topping across the tops of the muffins.
Step 10- Place in the oven for 5 minutes, reduce the oven temperature to 350 and continue baking for 15- 20 minutes or until a toothpick pushed into the center comes out clean.
