    • Butter
    • Sugar
    • Eggs
    • Vanilla Extract
    • Granny Smith Apples
    • Ground Cinnamon
    • Brown Sugar

    Substitutions

    Use Different Apples- While Granny smith apples are great in this recipe you can swap them out for other apple varieties. Choose a crisp apple that is firm and not too sweet. Some great options are Honeycrisp, Gala and Pink Lady. You can use apples that you love and they will be delicious!

    How to make this apple cinnamon muffin recipe

    Step 1- Preheat the oven to 425 and line a muffin tin with muffin wrappers.

    Step 2- Place flour, baking soda, baking powder, salt and ground cinnamon in a large bowl and stir with a whisk to mix well

    Step 3- In a large bowl using an electric mixer or in the bowl of a stand mixer mix together melted butter, sugar and eggs. Mix on low/ medium speed until completely mixed

    Step 4- Add half of the dry ingredients to the wet ingredients and stir together using a wooden spoon.

    Step 5- Add in the shredded apples and fold in until well distributed.

    Step 6- Mix in the remaining flour mixture. This muffin batter is very thick so make sure to mix thoroughly.

    Step 7- Fold in the diced apples and stir until they are well distributed. Set the muffin batter aside while you make the crumb topping.

    Step 8- Make the cinnamon crumb topping- Place brown sugar, flour, room temperature butter and cinnamon in a medium bowl.

    Step 7- Using a fork or pastry cutter blend the topping ingredients together until they are crumbly.

    Step 8- Scoop the muffin batter into the prepared muffin pan, fill them about ¾ full.

    Step 9- Sprinkle the crumb topping across the tops of the muffins.

    Step 10- Place in the oven for 5 minutes, reduce the oven temperature to 350 and continue baking for 15- 20 minutes or until a toothpick pushed into the center comes out clean.

    Step 11- Remove from the oven and allow the muffins to cool before eating.

    How to store these easy apple cinnamon muffins

    Before storing allow the muffins to to cool completely. Place the cooled muffins in an airtight container. The muffins can be stored for 1-2 days at room temperature, for longer storage place them in the refrigerator.

    To freeze these cinnamon apple muffins-

    You can freeze these muffins for up to 3 moths. For best results allow cool the muffins completely and then individually wrap each muffin in a layer of plastic wrap then aluminum foil to maintain freshness and prevent freezer burn. After wrapping, place the muffins in a freezer bag or airtight container, removing as much air as possible before sealing. When you're ready to enjoy a muffin, simply remove it from the freezer and let it thaw at room temperature for a few hours or overnight in the refrigerator. Alternatively, you can reheat them in the microwave for a quick and convenient treat.

    For the Muffin Batter

    • 2 Cups All-Purpose Flour
    • 1 teaspoon Baking Powder
    • ½ teaspoon Baking Soda

    • ½ Cup Butter- melted
    • 1 Cup Sugar
    • 2 Large Eggs
    • 1 ½ teaspoon Vanilla Extract
    • ¾ Cup Grated Granny Smith Apples
    • ¾ Cup Peeled and Finely Chopped Granny Smith Apples
    • ½ teaspoon Cinnamon

    For the Cinnamon Sugar Topping

    • ⅓ Cup Brown Sugar
    • 1 tablespoon Flour
    • 1 tablespoon Butter- Softened to room temperature
    • ⅛ teaspoon Cinnamon

    Instructions
