Blueberries and breakfast are a match made in heaven. We love them on pancake tacos, overnight oats, and blueberry breakfast cake. You can't go wrong.

- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- 2 tbsp unsalted butter, melted
- ¼ cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup blueberries
- For the Glaze:
- 1 cup of powdered sugar
- 1 Tablespoon milk
- ½ teaspoon vanilla extract
How to Make Blueberry Cake Donuts

Mix Dry Ingredients
In a large bowl whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt together.

Mix Wet Ingredients
In a smaller bowl, whisk the egg, milk, and vanilla extract.

Add Melted Butter
Melt the butter and pour it into the flour mixture. Stir until small crumbs form.

Fold in Blueberries
Next, add the egg mixture into the flour mixture, and lastly fold in blueberries.

Prepare to Roll out Dough
Place the dough on a heavily floured surface and sprinkle the top before rolling out.

Cut out Donuts
Using a donut cutter, cut out the donuts.
Then, fold the extra dough gently into a ball to roll out again

Fry Donuts in Hot Oil
Heat the oil in a Dutch oven or a large enough pot to fry 2-3 donuts at a time.
Test the oil temperature with a donut hole first. It should sink and then float within 10 seconds.
Fry donuts and let them drain on a wire rack, preferably over a baking sheet.

Add Glaze
While the donuts are cooling, add the glaze ingredients to a bowl and whisk together.
Dip each cooled donut in glaze or spoon over the top. Enjoy!

Blueberry Cake Donuts
Ingredients
- 1 ½ cup all-purpose flour

- 2 tablespoon unsalted butter, melted
- ¼ cup milk

- For the Glaze:
- 1 cup of powdered sugar
- 1 Tablespoon milk
- ½ teaspoon vanilla extract

- The dough will be soft but we don't want it very sticky
- Using a donut cutter, cut out the donuts.
- Fold the extra dough gently bringing it together in a ball to roll out again.
- Try not to overwork the dough.
- Heat the vegetable or canola oil in a dutch oven or large enough pot to fry 2-3 donuts at a time.
- Test the oil temperature with a donut hole first. It should sink and then float within 10 seconds.
- Fry donuts and let drain on wire rack, preferably over a baking sheet.
For the glaze:
- Add all the glaze ingredients to a bowl and wisk them together.
- If the glaze is thin you will have a light coating. You can thicken it up by adding more powdered sugar.
- Dip the cooled donuts in glaze, or spoon the glaze on.
