- 2 cups all-purpose flour
- ¾ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ½ cup butter softened
- 1 cup milk
- 1 large egg
- 2 teaspoons vanilla extract
For the streusel topping:
- ½ cup brown sugar
- ½ cup white sugar
- ½ cup all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ cup butter - cold and cut into cubes. Using unsalted butter gives it a more buttery flavor.

Preheat oven to 350 degrees F and grease an 8x8 baking dish with cooking spray or line with parchment paper.
For the Streusel Topping
- Mix the streusel ingredients:½ cup of light brown sugar, ½ cup of white sugar, ½ cup of flour sugars and 1 teaspoon of cinnamon in a medium bowl and stir to combine.
- Add in the cold cubed butter and press into the mixture with a fork until the dry ingredients are completely covered with butter.
For the Coffee Cake
- In a separate large bowl, add the flour, sugar, baking powder, salt and cinnamon and stir to combine.
- Then add the butter and, using a fork or pastry cutter, mashed the butter into the flour mixture until it is thoroughly blended into the dry ingredients.
- Next, add the egg, milk and vanilla extract and stir with a fork until the flour is just barely mixed in.
- Pour half of the batter into the prepared baking dish and top with one cup of the crumb topping to create a thin layer of streusel i n the middle.
- Pour the rest of the batter into the prepared pan and spread gently with a knife to cover the middle crumbles.
- Then evenly spread the remaining crumbles over the batter.
- Bake for 35-40 minutes until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool for 10 minutes before cutting.
