    These skillet fried potatoes are crispy golden brown on the outside and tender in the inside. Serve these for breakfast or as a side for dinner, and have them on the table in about forty-five minutes!

    ✨ Why we love skillet potatoes:

    • Tastes just like a restaurant These potatoes are delicious, but you don't have to go out to enjoy the best potatoes.
    • Simple ingredients You only need a few simple ingredients to whip up these crispy potatoes fast, that most people have on in their pantry.
    • Breakfast or Dinner- This easy side dish can just as easily be served as breakfast potatoes or for dinner These crispy potatoes are especially tasty with chicken drumsticks, crispy chicken, eggs, pork chops or burgers. These potatoes are more like home fries than hash browns.

    📝 Ingredient notes:

    • 2 pounds red potatoes or yukon gold, chopped into one-inch pieces. You can also use russet potatoes but I recommend soaking them for twenty minutes instead of 10.
    • ½ cup vegetable oil - Canola oil, peanut oil, sunflower seed oil, or avocado oil can also be used here.
    • ½ teaspoon black pepper
    • 1 teaspoon dried parsley- You can use a sprinkle of fresh parsley also.
    • 1 teaspoon salt or more to taste

    🔄 Substitutions And Variations

    • Seasoning- Try tossing the potatoes in a teaspoon of your favorite all-purpose seasoning blend at the end to your potatoes. Seasoning salt, Everything But The Bagel, or Greek seasoning with a squeeze of lemon juice all make excellent choices. If I'm making these potatoes for dinner, I'll often just add ¼ teaspoon of garlic powder or a pinch of chili powder to the salt, pepper and parsley.
    • Potatoes- Red potatoes, Yukon Gold potatoes or Russet potatoes will give you the best results for this recipe.
    • Oil- You need to use an oil that has a higher smoke point, which means it can be heated to higher temperatures before it starts burning. Vegetable oil, canola oil, peanut oil, sunflower seed oil and avocado oil all have a high smoke point and can be heated to 400 degrees or more. Extra virgin olive oil is not the best choice for this recipe, as we need to heat the oil fairly hot and it may scorch in the pan.
    • Bell Pepper And Onion- Some people like to add bell peppers and onions to fried potatoes. I recommend cooking the potatoes most of the way through, at least 6-8 minutes before adding peppers and onions. Otherwise, the peppers may burn before the potatoes have finished cooking.

    🔪 How to make Skillet Potatoes

    • Wash and dry the potatoes, then cut potatoes into roughly one-inch pieces.
    • Fill a large bowl with ice-cold water and add the raw potatoes. Allow the potatoes to soak for 10 minutes. Drain and rinse the potatoes, then place the potatoes on paper towels. Dry really well with paper towels to ensure potatoes become crispy.
    • Heat the oil in a deep, large skillet over medium-high heat.
    • Add the potatoes to the hot oil carefully. Cook the potatoes over medium heat, stirring often, for about 10-12 minutes or until the potatoes are tender and golden brown on all sides.

    • Remove the potatoes from the oil and transfer to a paper towel-lined plate to drain. Toss with salt, pepper and parsley before serving, then enjoy!

    ❄️ Storage Tips

    Store these potatoes in the refrigerator in a covered airtight container for up to 4-5 days.

    ♨️ Reheating Instructions

    These potatoes can be reheated by tossing and sauteeing them in a pan.

    You can also reheat the potatoes on a baking sheet in the oven at 400 hundred degrees.

    Air frying them at 400 degrees is another great way to reheat these potatoes quickly and still keep their crispiness.

    How Do I Dispose Of The Cooking Oil?

    Don't send the leftover cooking oil down the drain, it can block the pipes in the sink. Then you will likely have a bigger mess later and need to call a plumber when the pipes eventually clog.

    Instead, let the oil cool in the pan then pour in an old container you don't mind throwing away, like a can or a butter tub. Put the oil into the container, then you can throw it out with the trash.
