    Substitutions

    Sometimes, you don't have everything on hand, or perhaps you want to tweak the flavors. Here are some smart swaps:

    • Cream cheese → Swap with mascarpone for extra richness.
    • Pumpkin puree → Use homemade puree or even canned sweet potato puree.
    • Cool Whip → Replace with homemade whipped cream (stiff peaks hold best).
    • Pumpkin pie spice → Mix cinnamon, nutmeg, ginger, and cloves if you don't have a blend.

    Beat the Cream Cheese

    In a large mixing bowl, beat the cream cheese until smooth and fluffy. This is the secret to avoiding lumps later.

    Prevent Lumps

    Make sure the cream cheese is softened to room temperature before mixing. Beat it well before adding other ingredients for a smooth, creamy filling.

    • 1 8-oz package Cream Cheese Room temperature
    • 1 cup pumpkin puree
    • ¼ cup Sugar
    • ¼ cup Brown Sugar
    • ½ tsp. pumpkin pie spice
    • 8 oz. Coolwhip
    • 1 9" graham cracker pie crust
    • Extra cool whip for topping optional

    Instructions
     

    • In a large mixing bowl, beat cream cheese until smooth.
