Grasshopper Mint Brownies Recipe
Everyone loves a good chewy brownie, but when you add the taste of mint and a creamy, fluffy topping, you elevate a classic treat into something extraordinary. Grasshopper brownies are the perfect dessert for those who love the combination of chocolate and mint.
Not only are these brownies an absolute favorite to eat, but they're also a breeze to make. With simple ingredients, you can make these brownies in no time for any special occasion, for St Patrick's Day parties or just when you have a craving for something sweet.
Ingredients needed:

- Brownie Mix: The chocolatey fudgy base of this recipe.
- Eggs & Vegetable Oil: used by most boxed brownie mixes. Use the amounts listed on your box brand.
- Mint Baking Chips: Adds a burst of mint flavor to the brownies.
- Cream Cheese: The key to a creamy topping. I used full fat. But feel free to use ⅓ less fat cream cheese if you'd like.
- Marshmallow Fluff: adds sweetness to the cream cheese layer.
- Heavy Whipping Cream & Powdered Sugar: For create the fluffy, sweet topping.
- Green Food Coloring: Use as much or as little as you'd like for your desired green color.
- Chocolate Sandwich Cookies: I used the cookie part of Oreo cookies that I crumbled.
Substitutions
- Add 1-2 teaspoons of mint extract to the cream mixture for extra mint flavor. You can also add a teaspoon or two of creme de menthe if you don't mind a little alcohol in them. Peppermint extract can be used as well but it is definitely a stronger mint flavor.
- Swap the chocolate cookie crumbs for mini chocolate chips or a combination of both for varied texture.
- Use any type of chocolate wafer cookies for the topping.
- Add a Chocolate Ganache Layer: For extra decadence, add chocolate glaze layer. Make an easy ganache by melting a cup of semi-sweet chocolate and ¼ cup of heavy cream with 2 tablespoons of butter. (you can do this in the microwave in (3) 30 second intervals or in double boiler). Then pour the chocolate ganache over top of the cooled cream cheese layer and spread evenly. Then chill for another 30 minutes to set.
How to Make Grasshopper Brownies
Step 1: Preheat your oven to temperature listed on the box and prepare the brownie batter, mixing in the mint chips before spreading in a 9×13 pan.
Step 2: Once baked, let the brownies cool completely. In a mixing bowl, blend the cream cheese and 4-5 drops of green food coloring together with an electric mixer until fluffy and then stir in the marshmallow fluff. (use a hand held mixer or stand mixer fitted with the paddle attachment.
Step 3: In a separate bowl, add the heavy cream and powdered sugar and beat until stiff peaks form. Then stir this mixture into the green mixture.
Step 4: Spread this green mixture over the cooled brownies in an even layer and chill in the refrigerator for at least 2 hours.
Step 5: Sprinkle with crushed cookies on top of the brownies just before serving.
Tips:
- For extra minty flavor, don't hesitate to adjust the amount of mint extract or baking chips.
- Remember, chilling is crucial for setting the layers perfectly.
- Line the baking pan with parchment paper to lift the brownies out easily.
- For clean slices, use a sharp knife and wipe it clean with a paper towel between slices.
How to Store?
Refrigerate: Since these brownies have cream cheese, keep these stored the refrigerator in an airtight container for up to 5 days.
Freeze: These brownies freeze well for up to 2 months. Just leave the cookie crumble off until you're ready to serve. Place them in a freezer safe container and place a piece of wax paper or parchment paper between layer if needed. Thaw in the refrigerator.

- 2 large eggs
- 3/2 cup vegetable oil
- 3 tablespoons water
- ½ cup mint baking chips
- 8 ounces cream cheese room temperature
- 5 drops Green food coloring
- ½ cup marshmallow fluff
- ½ cup heavy whipping cream
- ⅓ cup powdered sugar
- 6 chocolate sandwich cookies like Oreos (cookie part only, not the creme filling)
Instructions
Bake the brownies
- Preheat oven to 325° F and grease a 9x13 baking dish. (or to your package directions.18.3 ounces brownie mix
- In a large mixing bowl, prepare the brownie mix per your package directions.2 large eggs, 3/2 cup vegetable oil, 3 tablespoons water
- Add the mint chips and stir to combine.½ cup mint baking chips
- Spread the batter into the prepared pan and bake according to package directions.
- Remove from the oven and allow them to cool cool completely before adding the topping.
Make the topping
- In a separate bowl, add the softened cream cheese and 4-5 drops of green food coloring and blend with an electric mixer on medium speed until well combined. (add more food coloring to reach desired color)8 ounces cream cheese, 5 drops Green food coloring
- Then add in the marshmallow fluff and blend until combined.½ cup marshmallow fluff
- In a separate bowl, add the heavy whipping cream and powdered sugar and beat until stiff peaks begin to form.½ cup heavy whipping cream, ⅓ cup powdered sugar
- Gently fold the whipping cream into the cream cheese mixture and stir to combine.
- Spread the mixture over top of the cooled brownies and chill for at least 2 hours.
- Just before serving, crush the chocolate cookies and sprinkle the crumbs evenly over top of the brownies.6 chocolate sandwich cookies
