    Whip up these chocolate covered cheesecake bites as a no bake cheesecake treat that takes minimal effort to make. They have a creamy cheesecake center that's dipped in melted chocolate and topped with toffee pieces.     These little chocolate balls are filled with the most decadent cheesecake filling that makes a delicious dessert for any occasion. Cream cheese cheesecake balls are super easy to make and require no baking.

    • What is so fantastic about this no bake cheesecake balls recipe is you don't have to turn the oven on. Just prep cream cheese filling, shape into balls, dip and top with the candies.

    Ingredients needed:

    • 16 ounces cream cheese, room temperature
    • ⅔ cup powdered sugar 
    • 2 teaspoon vanilla extract
    • 7 ounce chocolate melting wafers 
    • ½ cup toffee baking bits

    🔪 How to make Cheesecake Bites Recipe

    Line baking sheet with parchment paper and set aside. 

    Step One: Make Cheesecake Filling

    • Then in a bowl of an electric mixer, or using hand mixer, combine cream cheese, powdered sugar, and vanilla extract. Mix on low speed until it's smooth and creamy.

    • Now with a cookie scoop form 1-inch balls and place on baking sheet. 
    • Freeze for 30 minutes.

    Step Two: Melt Chocolate and Dip Cheesecake

    • Melt the chocolate in the microwave in 30-second intervals.
    • Using a fork or a toothpick, dip the cream cheese balls into the chocolate and tap on the side of the bowl to remove the excess chocolate. Place the covered balls on the parchment paper. Immediately sprinkle the chocolate coating with the toffee bits. 
    • Refrigerate until hardened and serve. 

    ❄️ Storage Tips

    Refrigerate: You can refrigerate any of the toffee cheesecake balls you do not eat right away. Just place in a sealed bag or container. If you are going to stack the cheesecake balls place wax paper between each row to prevent the balls from sticking together. 

    Freezing: You can also freeze the cheesecake balls in an airtight freezer container for 3-4 months. Then when you want a few just remove and let them quick thaw on the counter or in the fridge overnight.

    Suggestions and Alternatives 

    • Feel free to use different flavors of chocolate. White chocolate, semi-sweet, dark chocolate, etc. 
    • Add in ⅓ cup of heath chips into the cream cheese mixture. This will add more toffee flavor to the cheesecake balls. 
    • Graham crackers - Place some crushed graham crackers on the bottom of the parchment paper lined tray. When you place the dipped balls on the tray, it will pick up some of the graham cracker crumbs. 
    • Melt white chocolate and drizzle on top of the cheesecake balls along with the toffee. 
    • chocolate chips - you can melt milk chocolate chips with a teaspoon of coconut oil to use for dipping if you can't find melting chocolates
    • Oreo cookies - crush Oreos into fine crumbs and add as a topping
    • Other candies - M&M's, candy bars of choice, crushed peppermint candies, or another other flavors also make great alternatives. These cheesecake bites are endless in terms of the flavor opportunities.

    Yes, you can make these cheesecake bites ahead of time. Just make as directed and then place in an airtight container and store till you are ready to serve. You can make these 1-2 days in advance.

    Go right ahead and double or even triple the recipe if you would like. Just use an extra tray if need be for when you are prepping the cheesecake balls.

    Ingredients
      

    • 16 ounces Cream Cheese softened
    • ⅔ cup Powdered Sugar
    • 1 teaspoon Vanilla Extract
    • 7 ounce chocolate melting wafers
    • ½ cup toffee baking bits we used Heath

    Instructions
     

    • Line a baking sheet with parchment paper.
    • Beat cream cheese, powdered sugar, and vanilla extract with an electric mixer, until smooth and creamy.
    • Form mixture into one inch balls, and set on the baking sheet.
    • Freeze for 30 minutes.
    • Line another baking sheet with parchment paper.
    • Add the chocolate wafers to a small bowl and melt in the microwave in 30 second increments, stirring between each heating session, until fully melted.
    • Remove the cheesecake balls from the freezer, and dip them one by one into the chocolate. Then set on the clean sheet of parchment, and top with toffee.
    • Refrigerate until ready to serve.
