    📝 Ingredient notes:

    For these crispy treats, be sure to grab the following items when you are at the grocery store.

    • 10 oz Bag Mini Marshmallows 
    • ½ Cup Butter 
    • 6 Cups Rice Krispies Cereal
    • 1 Cup Dry Red Velvet Cake Mix
    • 1 teaspoon Vanilla 
    • ⅓ Cup White Chocolate Chips 
    • Taste Free Red Food Coloring (gel is recommended)

    🔄 Substitutions

    If you don't want to use gel food coloring, you can use whatever you have on hand for these easy treats.

    Feel free to use your favorite rice cereal brand.

    It's ok to use large marshmallows instead of mini marshmallows but you may need to add them to your pan in batches until they melt.

    Unsalted butter will result in a sweeter treat. My personal preference is to use salted butter to balance out the sweetness but you can use either kind.

    The method of cooking these treats is similar to regular rice krispie treats with the addition of some red velvet cake mix and food coloring.

    Step 1: Prepare a 13x9 pan by lining it with parchment paper and buttering the parchment. 

    Step 2: In a large pot over medium heat melt butter and marshmallows, stirring frequently until completely melted and smooth.

    Step 3: Remove from heat and add in uncooked cake mix and vanilla, stir until well mixed.

    Step 4: Drop in ½-1 teaspoon of red gel food coloring and stir to incorporate, add more if necessary to achieve desired color.

    Step 5: Add in Rice Krispies cereal and stir to coat.

    The mixture will be very thick.

    Step 6: Place mixture in prepared pan and evenly press into place and allow to cool completely.

    Step 7: Remove the treats from the pan and cut into 16 even rectangles. 

    Step 8: Place white chocolate chips in a microwave safe bowl and microwave them in 30 second increments stirring in between until melted and smooth.

    Step 9: Place the melted chocolate in a piping bag or a zip top baggie.

    Step 10: Cut off the end or corner and pipe chocolate across each treat and allow chocolate to cool.

    Store leftovers in an airtight container and refrigerate for 2-3 days. If using melting chocolate for decorating, be sure it has hardened before storing.

    You may want to place a sheet of parchment paper between layers.

    When working with the cereal and marshmallow mixture, coat your hands with cooking spray to make the process less sticky.

    You can also add a sheet of wax paper on top of the sticky cereal mixture when pressing it into the pan to help keep your hands clean.

    Why are my rice krispie treats too chewy?

    This could be due to having too much butter. If you have a kitchen scale, try weighing the butter to be sure you measured correctly. One half cup of butter should weigh about 113 grams or 4 ounces. It's also important to heat the butter and marshmallows slowly. You don't want them to get too hot, just melted.

    Do rice krispie treats go bad?

    Yes rice krispies treats can go bad due to the ingredients used. They should be eaten within 2-3 days of making and stored in the refrigerator.

    Why are my rice crispy treats falling apart?

    This is a simple recipe but it is possible to overcomplicate it. So remember when making your rice crispy treats to measure correctly, don't overheat or over mix and be sure your ingredients are fresh. Then, enjoy!

    Ingredients
