    • Chocolate chips: Semi-sweet or dark chocolate chips both work-use what you love!
    • Caramel bits: These melt into gooey pockets of soft caramel. If you can't find caramel bits, chop up Werther's soft caramels or other caramel candies.
    • Kosher salt: Sprinkling sea salt flakes on top enhances the caramel and chocolate flavors.

    How to Make Salted Caramel Chocolate Chip Cookies

    Step 1

    In a large mixing bowl or stand mixer fitted with the paddle attachment, cream together the butter, brown sugar, granulated sugar, vanilla extract, and eggs until light and fluffy. This takes about 5 minutes-don't skip this step!

    Step 2

    Add the flour, cornstarch, baking soda, and salt. Mix on low until the dry ingredients are just combined.

    Step 4

    Scoop the cookie dough into balls using a medium cookie scoop. Place the cookie dough balls onto a parchment paper lined baking sheet.

    Instructions
     

    • In the bowl of a stand mixer fitted with the paddle attachment, cream the softened butter, brown sugar, granulated sugar, vanilla extract, and eggs on medium speed until light and fluffy (about 5 minutes). Scrape down the sides as needed.
    • Add the flour, cornstarch, baking soda, and salt. Mix on low speed until just combined-do not overmix.
    • Stir in the chocolate chips and caramel bits until evenly distributed throughout the dough.
    • Using a medium cookie scoop (about 2-3 tablespoons), portion the cookie dough onto a parchment- or wax paper-lined baking sheet. Cover and refrigerate for at least 2 hours or up to 5 days.
    • When ready to bake, preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper or silicone baking mats.
    • Place 8 cookies per sheet to allow room for spreading. Bake for 8-9 minutes, until the edges are set and the centers are just starting to turn golden brown.
    • Immediately sprinkle the tops of the warm cookies with kosher salt or flaky sea salt.
    • Let the cookies cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.

    For a less sweet cookie, reduce the chocolate chips to ½ cup. You can use caramel chips or finely chopped soft caramel candies instead of caramel bits. Chill the dough for the full 2 hours for thicker, chewier cookies. To freeze, portion the dough into balls and freeze on a baking sheet. Transfer frozen dough balls to a freezer-safe bag for up to 3 months.
