    Cheesecake Iced Thumbprint Cookies

    We love cookies and cheesecake and these cookies combine them both beautifully! Tender buttery shortbread cookies are filled with a creamy cheesecake icing filling to create a cookie that is simple and delicious.

    These are great for any holiday, for parties like baby showers or birthdays, or to have for dessert with a cup of coffee any day! Make them alongside our Oreo Cheesecake Cookies, Potato Chip Cookies, and Old Fashioned Carrot Cookies for an amazing cookie spread with something for everyone!

    Here is why our recipe is the best:

    • Simple dough - the base of these cookies is a simple buttery shortbread like cookie. They only require a handful of simple ingredients so they are easy to whip up any time.
    • Bite-sized cookies - While we love a giant cookie nothing beats the perfect bite size treat!

    Ingredients needed:

    Ingredient notes:

    • Flour- All purpose flour works best for these cookies. Make sure to scoop the flour into the measuring cup for an accurate measurement.
    • Sugar- Regular white sugar or cane sugar works well
    • Butter- Salted or unsalted butter works well. Make sure it is softened to room temperature before making the cookie dough.
    • Sour Cream- This helps make the filling nice and creamy.
    • Cream Cheese- Use full fat cream cheese softened to room temperature.
    • Vanilla- Make sure to use real vanilla extract.
    • Eggs - Use fresh large eggs

    How to make cheesecake thumbprint cookies

    The first step is to make the cheesecake filling

    1. In a medium size bowl with an electric mix together sugar and cream cheese until well blended.
    2. Add in salt, vanilla, egg yolk and sour cream, continue mixing scraping down the sides with a rubber spatula until everything is evenly mixed.
    3. Cover the bowl with plastic wrap and place in the refrigerator for at least 30 minutes.

    Make the Cookie Dough

    1. Preheat the oven to 350 and line a cookie sheet with parchment paper.
    2. In a medium bowl whisk flour, and salt, mix until well incorporated.
    3. In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment cream together butter and sugar.
    4. Add vanilla and egg yolk and continue mixing until everything is well blended.
    5. Gradually add in the dry ingredients, mixing after each addition, until it is all incorporated and a soft dough forms.
    1. Scoop out cookie dough in tablespoon size scoops and roll into balls.
    2. Place balls of dough on the lined cookie sheet about 2 inches apart.
    3. Using the handle end of a wooden spoon or your thumb press an indentation into the center of each ball of dough.
    4. Place the cookie sheet in the oven and bake for 10 minutes.
    1. Remove from the oven, gently press in the center of each cookie again with a wooden spoon or other small round object(not your finger)
    2. Using a small spoon fill the indentations with the cheesecake icing mixture.
    3. Place cookies back into the oven and bake for an additional 10-12 minutes or until the filling is set and the edges are golden brown.
    4. Let cookies cool on the baking sheet for 2-3 minutes before removing to a cooling rack to cool completely .

    How to store Cheesecake Thumbprint Cookies

    These cookies can be stored at room temperature in an airtight container. If you are layering them in your container place a piece of parchment paper or wax paper between layers to keep them from sticking together.

    Can I make them different flavors?

    Absolutely! Using vanilla extract gives these cookies a classic vanilla flavor but you can easily change it up by using different extracts. Some of our favorite to use are almond extract, lemon extract or rum extract. Don't be afraid to try your favorite flavor! You can even add strawberry or raspberry jam to the cheesecake filling mixture to make a fruity cheesecake flavor.
