Cheesecake Iced Thumbprint Cookies
We love cookies and cheesecake and these cookies combine them both beautifully! Tender buttery shortbread cookies are filled with a creamy cheesecake icing filling to create a cookie that is simple and delicious.

- Simple dough - the base of these cookies is a simple buttery shortbread like cookie. They only require a handful of simple ingredients so they are easy to whip up any time.
- Bite-sized cookies - While we love a giant cookie nothing beats the perfect bite size treat!

- Flour- All purpose flour works best for these cookies. Make sure to scoop the flour into the measuring cup for an accurate measurement.
- Sugar- Regular white sugar or cane sugar works well
- Butter- Salted or unsalted butter works well. Make sure it is softened to room temperature before making the cookie dough.
- Sour Cream- This helps make the filling nice and creamy.
- Cream Cheese- Use full fat cream cheese softened to room temperature.
- Vanilla- Make sure to use real vanilla extract.
- Eggs - Use fresh large eggs
How to make cheesecake thumbprint cookies
The first step is to make the cheesecake filling
- In a medium size bowl with an electric mix together sugar and cream cheese until well blended.
- Add in salt, vanilla, egg yolk and sour cream, continue mixing scraping down the sides with a rubber spatula until everything is evenly mixed.
- Cover the bowl with plastic wrap and place in the refrigerator for at least 30 minutes.

Make the Cookie Dough
- Preheat the oven to 350 and line a cookie sheet with parchment paper.
- In a medium bowl whisk flour, and salt, mix until well incorporated.
- In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment cream together butter and sugar.
- Add vanilla and egg yolk and continue mixing until everything is well blended.
- Gradually add in the dry ingredients, mixing after each addition, until it is all incorporated and a soft dough forms.

- Scoop out cookie dough in tablespoon size scoops and roll into balls.
- Place balls of dough on the lined cookie sheet about 2 inches apart.
- Using the handle end of a wooden spoon or your thumb press an indentation into the center of each ball of dough.
- Place the cookie sheet in the oven and bake for 10 minutes.

- Remove from the oven, gently press in the center of each cookie again with a wooden spoon or other small round object(not your finger)
- Using a small spoon fill the indentations with the cheesecake icing mixture.
- Place cookies back into the oven and bake for an additional 10-12 minutes or until the filling is set and the edges are golden brown.
- Let cookies cool on the baking sheet for 2-3 minutes before removing to a cooling rack to cool completely .

These cookies can be stored at room temperature in an airtight container. If you are layering them in your container place a piece of parchment paper or wax paper between layers to keep them from sticking together.
