    🥫 Ingredients needed:

    📝 Ingredient notes:

    • 1 ½ pounds chicken breasts
    • 1/1/2 cup colby jack cheese
    • 1 ½ cup barbecue sauce
    • 2 artisan flatbreads
    • 1 tablespoon olive oil
    • 1 teaspoon oregano
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper

    🔄 Substitutions

    • We love using a flatbread base but if you don't have that, feel free to use regular store bought pizza crust. This recipe also works great with naan bread.
    • Don't have time to cook the chicken? Make this recipe even easier by using rotisserie chicken instead.
    • You can substitute mozzarella cheese for the colby jack if necessary.

    🔪 How to make BBQ Chicken Flatbread Pizza

    Step 1: Preheat oven to 375 degrees.

    Step 2: Drizzle half of the olive oil onto the baking sheet, then place the chicken on top. Drizzle the other half of the oil over the breasts, then add salt and pepper.

    Step 3: Bake chicken for 30 minutes. Chicken is cooked through when your meat thermometer reads 165 degrees.

    Step 4: Shred the chicken, using two forks to pull it apart. Set aside.

    Step 5: Spread ¾ cup bbq sauce on the bottom of of one of the flatbreads (the flat side). Doing this will add more flakiness to the textured side. Repeat with the second flatbread. We used Sweet Baby Rays but you can use your own favorite bbq sauce.

    Step 6: Cover each flatbread with half of the shredded chicken.

    Step 7: Finally, top each with shredded cheese, then sprinkle with oregano.

    Step 8: Bake for 7-9 minutes. Remove from the oven, cut into squares and enjoy!

    ❄️ Storage Tips

    To store, place in an airtight container and refrigerate for up to two days. Freezing is not recommended because the flatbread tends to get to moist.

    ♨️ Reheating Instructions

    Ready to warm them up? Just preheat your oven to 375 degrees and place flatbread directly on the oven rack. Cook for 7-8 minutes, or until heated through.

    Can I make BBQ Chicken Pizza with regular pizza crust?

    Yes! This recipe tastes delicious with pizza crust too! If you're buying the premade pizza crust, the recipe remains pretty much the same. If using pizza dough, you'll have to bake the pizza dough first, then add the chicken and other ingredients.

    What other toppings can I add?

    This recipe tastes delicious with a little red onion. You can also garnish it with some green onion. It tastes great and adds a little color too.

    How do I make the flatbread crispier?

    Baking your flatbread pizza for 2-3 minutes longer than suggested will give you a crispier crust.

    Can you reheat this in the microwave?

    You can reheat your leftover flatbread pizza in the microwave but the crust just won't be as crispy. If that doesn't bother you, go for it. Otherwise, you may want to reheat in the oven.

    • 1 Baking sheet
    • 1 Basting brush
    • 1 Meat thermometer

    Ingredients
      

    • 1 tablespoon olive oil divided
    • 1 ½ pounds chicken breasts
    • 1 ½ cup colby jack cheese shredded
    • 1 ½ cup bbq sauce
    • 2 artisan flatbreads
    • 1 teaspoon oregano
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper

    Instructions
     

    • Preheat oven to 375 degrees.
    • Drizzle half the olive oil over the baking dish, then place chicken on top.

    • Drizzle remaining olive oil, salt, and pepper over the chicken.
      ½ teaspoon salt, ½ teaspoon ground black pepper
    • Bake for 30 minutes, or until internal temperature of chicken reaches 165 degrees.
    • Once chicken has finished baking, use two forks to shred it into pieces.
    • Turn the flatbreads so that they are bottom side up (the bottom is the flat side). Divide bbq sauce in half and spread half over each flatbread.

    • Cover each flatbread with half of the chicken.
    • Sprinkle each with shredded cheese, then add the oregano.

    • Bake on the oven rack for 7 minutes. For crispier flatbread, bake a little longer.
    • Remove from the oven and cut into squares. Enjoy!

    Notes

    Spreading the bbq sauce over the bottom of the flatbread allows the textured side to remain flaky.
    Up the heat level with some pepper flakes or a little chili powder.
