    🥫 Ingredients needed:

    For the Chicken:

    • 1 tablespoon olive oil
    • 1 medium onion, chopped
    • 1 lb ground chicken
    • 1 red bell pepper, chopped
    • 1 green bell pepper, chopped
    • 8 oz whole canned water chestnuts, drained and diced
    • ½ teaspoon salt
    • 1 teaspoon black pepper

    For the Peanut Sauce:

    • 2 tablespoons soy sauce
    • 3 tablespoon hoisin sauce
    • 1 tablespoon sesame oil
    • 1 teaspoon minced garlic
    • 1 teaspoon minced fresh ginger
    • 1 tablespoon peanut butter - smooth or chunky
    • 1 teaspoon sriracha or chili sauce (optional, but recommended)

    Bibb lettuce for serving

    🔄 Substitutions

    • Chopped chicken - you can use finely chopped chicken breasts in place of ground chicken.
    • Ground turkey
    • Nut butter - You can replace peanut butter with any other nut butter if you have a peanut allergy.
    • red pepper flakes - if you like a little more heat in your Asian dishes, add a little red pepper flakes to the lettuce wraps

    🔪 How to make Asian Chicken Lettuce Wraps

    Instructions:

    • Heat oil in a large skillet over medium-high heat. Once hot add onion and sauté until onion softens and becomes translucent.
    • Add ground chicken and cook until browned around 6-7 minutes.
    • Add the bell peppers and water chestnuts and cook on a medium flame for 2-3 minutes or until the peppers soften a little.
    • In a medium bowl, whisk all the sauce ingredients until combined.
    • Pour the sauce into the chicken mixture and let it simmer on low heat until the chicken and veggies are well coated with the sauce. Season with salt and pepper.
    • To serve, spoon 2-3 tablespoons of the chicken mixture into the center of the lettuce leaf and top it with some chopped spring onions and sesame seeds.

    You can store the chicken filling an airtight container for 3 days in the refrigerator or around 3 months in the freezer. We recommend you store the meat mixture separate from the lettuce and toppings.

    • green onions - slice some scallions to use for garnish on top
    • seasme seeds - toast them to bring out the flavor
    • sriracha - for those wanting extra heat
    • chopped peanuts - chop a few peanuts and sprinkle on top

    Warm chicken mixture in a skillet on low for a few minutes until meat is warmed through. You can also warm for a minute or two in the microwave. Serve on fresh lettuce.
