    If you need a festive holiday cookie that's quick, chewy, and full of flavor, these peppermint cake mix cookies are for you. Made with chocolate cake mix, peppermint extract, and crushed candy canes, they're soft in the center with a little crunch on top. Best of all, they're ready in just 20 minutes. Holiday baking made simple!

    Another of our favorite cookies to make, holiday or not, is our cheesecake thumbprint cookies. They are perfect for a Pittsburgh cookie table at weddings. I highly suggest making our Christmas Donuts this holiday season.

    Ingredients needed:

    These cookies use simple pantry staples plus holiday flair from peppermint candy. Cake mix gives you a shortcut to soft, chewy cookies without extra fuss.

    Substitutions

    • Cake Mix: Swap chocolate with devil's food or fudge mix for a richer flavor.
    • Butter: Vegetable oil works, though cookies will spread a bit more.
    • Peppermint Extract: Use mint extract for a lighter flavor.
    • Mini Chocolate Chips: White chocolate or peppermint chips are fun swaps.
    • Peppermint Candy: Crushed candy canes or Andes peppermint pieces work perfectly.

    How to make these cookies

    Holiday baking doesn't get easier than this! Here's how to make these cookies step by step:

    Preheat & Prep

    Preheat oven to 350°F. Line a baking sheet with parchment paper for easy cleanup.

    Mix the Dough

    Beat together cake mix, melted butter, eggs, and peppermint extract until smooth and well combined.

    Add the Chocolate Chips

    Fold in mini chocolate chips with a spatula.

    Scoop & Shape

    • Scoop dough into balls using a cookie scoop or tablespoon.
    • Place on the prepared baking sheet and press down slightly.
    • Top each cookie with crushed peppermint candy.

    Bake

    Bake for 8-10 minutes until edges are set but centers remain soft.

    How do I keep the peppermint from melting?

    If your peppermint candy is too finely chopped it will melt into your cookie. If you want more of a crushed candy topping we suggest to add most of the crushed peppermint after baking while cookies are still warm, or gently press it in halfway through baking.

    Cool

    Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

    Yes! Yellow or vanilla cake mix works if you want a lighter base, but in our opinion, chocolate pairs best with peppermint.

    Ingredients
      

    • 1 Box Cake mix Chocolate
    • ½ cup butter melted, plus 2 tablespoons
    • 2 eggs
    • 1 teaspoon peppermint extract
    • ½ cup mini chocolate chips
    • ½ cup peppermint candy crushed

    Instructions
     

    • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
    • Beat together the cake mix, butter, eggs, and extract until smooth and well combined.
      1 Box Cake mix, ½ cup butter, 2 eggs, 1 teaspoon peppermint extract
    • Fold in the chocolate chips.
      ½ cup mini chocolate chips
    • Use a cookie scoop or tablespoon to scoop out the dough and roll it into a ball. Place the ball on the lined baking sheet and press down slightly with the palm of your hand. Top the dough with crushed peppermint.
      ½ cup peppermint candy
    • Bake the cookies for 8 to 10 minutes, until the edges and firm but the center is still soft.
    • Allow the cookies to cool on the baking sheet for five minutes, then transfer to a wire cooling rack to cool completely.
