Substitutions
Want to switch things up? Here are a few easy swaps:
- Ground beef - Ground turkey or ground chicken for a leaner option
- Fritos - Crushed Doritos, tortilla chips, or even corn chips for a different crunch
- Mexican cheese blend - Cheddar, Colby Jack, or pepper jack work great too
- Salsa - Use enchilada sauce or diced tomatoes with green chilies for a twist
- Onions - Swap with green onions for a milder flavor
Instructions

Preheat & Prep
Preheat your oven to 350°F and spray a 9x13 baking dish with nonstick spray.

Brown the Ground Beef
In a large skillet over medium heat, cook the ground beef, breaking it up as it browns. Cook until no pink remains.

Sauté the Onions
Transfer the cooked beef to a bowl, leaving about a tablespoon of drippings in the pan. Add the diced onion and sauté over medium heat until soft and translucent, about 5-10 minutes.

Mix the Taco Meat
Return the ground beef to the pan with the onions. Stir in taco seasoning, salsa, and water. Let everything simmer together for 5-10 minutes, stirring occasionally.

Layer the Casserole
Spread the meat mixture evenly in the prepared baking dish. Sprinkle cheese over the top, then finish with a layer of lightly crushed Fritos.
Crunch Tip
Don't crush the Fritos too small, you want them to hold some crunch!

Bake
Bake uncovered for 10-15 minutes, or until the cheese is fully melted and bubbly.

Top and Serve
Scoop into bowls and top with your favorite taco fixings like sour cream, jalapeños, or guac.

Prep Tip
Want to prep ahead? You totally can! Assemble the meat and cheese layers (skip the Fritos for now), then cover and refrigerate for up to 2 days. When ready to bake, add the crushed Fritos on top and pop it in the oven. This keeps the chips from getting soggy and saves you time during busy evenings.
Storage Tips
Leftovers can be refrigerated in an airtight container for up to 3-4 days. The Fritos will soften slightly but the flavor stays on point.
For best results when reheating, pop a serving in the oven or toaster oven to help bring back some crunch. You can also reheat in the microwave, but the chips will be softer.
