    How to make our Chipotle Chicken Sandwiches

    1. Start by marinating the chicken. Finely dice the chipotle pepper and place it in a medium bowl. Add olive oil, honey, lime juice, and adobo sauce. Whisk together. Add the spices and minced garlic and whisk again until combined.

    1. Place the chicken thighs in a large zip-top bag or airtight container. Pour the marinade over the chicken and stir or shake to coat. Refrigerate for at least 8 hours or overnight for best flavor.

    Ingredients
      

    • 4 Boneless Skinless Chicken Thighs

    For the Marinate:

    • ½ Cup Olive Oil
    • 2 tablespoon Adobo Sauce
    • 2 teaspoon Minced Garlic
    • ½ teaspoon Smoked Paprika
    • 1 tablespoon Honey
    • ½ teaspoon Cumin
    • ½ teaspoon Onion Powder
    • ½ teaspoon Salt
    • ¾ Cup Lime Juice
    • 1 Chipotle Pepper - diced

    For the Chipotle Sauce:

    • ½ Cup Mayonnaise
    • ¼ Cup Sour Cream
    • 1 tablespoon Lime Juice
    • 1 tablespoon Adobo Sauce
    • ¼ teaspoon Smoked Paprika
    • 1 teaspoon Honey

    For the Sandwiches:

    • Cooked Bacon Slices
    • Cheddar Cheese Slices
    • Thinly Sliced Red Onions
    • Sliced Tomatoes

    Instructions
     

    • Marinating the chicken is the first step. First finely dice a chipotle pepper and place it in a medium size bowl. Next add in the olive oil, honey, lime juice, and adobo sauce. Whisk together. Add in the spices and minced garlic. Whisk until everything is well mixed.
    • Place the chicken thighs in a large zip top bag or other air tight container. Pour the marinade over and stir or shake to cover all the chicken. For best results refrigerate at least 8 hours or overnight.

    Make the Sauce:

    • Place all the sauce ingredients in a small bowl and stir together until everything is well blended. Cover the bowl or place the sauce in an airtight container and refrigerate until ready to assemble the sandwiches.

    Make the Sandwiches:

    • The chicken can be grilled or cooked in a skillet. Lightly oil your surface and heat to medium high heat. Place the chicken on the grill or in a skillet. Cook on one side for 4-5 minutes, and then flip and continue cooking another 4-5 minutes or until the chicken is cooked through. The internal temperature should be 165.
    • Spread the chipotle sauce on the buns, then add the chicken, a couple slices of bacon, a slice of cheese, tomato, and red onion. Serve immediately.

    Notes

    Boneless Skinless Chicken Breasts can be used instead of thighs
    Adobo sauce can be purchased separately but purchasing Chipotle peppers in adobo sauce is the best for this recipe so you get both in one.
    More chipotle peppers can be used in the marinade for spicier chicken.
    Chicken can be marinated for less time but the flavor will not be as good.
    The sauce can be made the night before or immediately before serving.
