Ingredients
  

For the Muffin Batter

  • 2 Cups All Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ Cup Butter- melted
  • 1 Cup Sugar
  • 2 Large Eggs
  • 1 ½ teaspoon Vanilla Extract
  • ¾ Cup Grated Granny Smith Apples
  • ¾ Cup Peeled and Finely Chopped Granny Smith Apples
  • ½ teaspoon Cinnamon

For the Cinnamon Sugar Topping

  • Cup Brown Sugar
  • 1 tablespoon Flour
  • 1 tablespoon Butter- Softened to room temperature
  • teaspoon Cinnamon

Instructions
 

  • Preheat the oven to 425 and line a muffin tin with muffin wrappers.
  • Place flour, baking soda, baking powder, salt and ground cinnamon in a large bowl and stir with a whisk to mix well
    2 Cups All Purpose Flour, 1 teaspoon Baking Powder, ½ teaspoon Baking Soda, ½ teaspoon Salt, ½ teaspoon Cinnamon
  • In a large bowl using an electric mixer or in the bowl of a stand mixer mix together melted butter, sugar, vanilla and eggs. Mix on low/ medium speed until completely mixed
    ½ Cup Butter- melted, 1 Cup Sugar, 2 Large Eggs, 1 ½ teaspoon Vanilla Extract
  • Add half of the dry ingredients to the wet ingredients and stir together using a wooden spoon.
  • Add in the shredded apples and fold in until well distributed.
    ¾ Cup Grated Granny Smith Apples
  •  Mix in the remaining flour mixture. This muffin batter is very thick so make sure to mix thoroughly.
  • Fold in the diced apples and stir until they are well distributed. Set the muffin batter aside while you make the crumb topping.
    ¾ Cup Peeled and Finely Chopped Granny Smith Apples
  • Make the cinnamon crumb topping- Place brown sugar, flour, room temperature butter and cinnamon in a medium bowl.
    ⅓ Cup Brown Sugar, 1 tablespoon Flour, 1 tablespoon Butter- Softened to room temperature, ⅛ teaspoon Cinnamon
  • Using a fork or pastry cutter blend the topping ingredients together until they are crumbly.
  • Scoop the muffin batter into the prepared muffin pan, fill them about ¾ full.
  • Sprinkle the crumb topping across the tops of the muffins.
  • Place in the oven for 5 minutes, reduce the oven temperature to 350 and continue baking for 15- 20 minutes or until a toothpick pushed into the center comes out clean.
  • Remove from the oven and allow the muffins to cool before eating.
