Skillet Potatoes

These crispy, golden brown skillet potatoes are delicious as a side dish for breakfast or dinner. Make them in under 45 minutes for a delicious side everyone will love!

Ingredients
  

  • 2 pounds red potatoes or yukon gold, chopped into one-inch pieces
  • ½ cup vegetable oil
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 teaspoon salt or more to taste

Instructions
 

  • Wash and dry the potatoes, then chop into one inch pieces.
  • Fill a large bowl with ice-cold water and add the potatoes. Allow the potatoes to soak for 10 minutes. Drain and rinse the potatoes, then place the potatoes on paper towels. Dry really well with paper towels to ensure potatoe become crispy.
  • Heat the oil in a large, deep skillet over medium heat.
  • Add the potatoes to the oil carefully. Cook the potatoes over medium-high heat, stirring often, for about 10-12 minutes or until the potatoes are tender and golden brown on all sides.
  • Remove the potatoes from the oil and transfer to a paper towel-lined plate to drain. Toss with salt, pepper and parsley before serving, then enjoy!
