Cheesy Baked Rotini Pasta

You'll love how easy this cheesy baked rotini pasta bake is! With only five ingredients, this dinner is perfect to prep ahead for busy weeknights. Plus it's kid friendly, but has plenty of flavor for the adults to enjoy.

Ingredients
  

  • 16 ounces rotini pasta
  • 4 cups marinara sauce
  • 16 ounces cottage cheese
  • 1 large egg gently whisked with a fork
  • 2 cups shredded cheese mozzarella, Monterrey Jack or Cheddar, divided

Instructions
 

  • Place a large pot of salted water over high heat. Once the water in boiling add the noodles. Cook for 8-9 minutes until al dente. Drain the noodles, saving ½ cup of pasta water to the side.
  • Preheat the oven to 350°. Oil a 9 x 13 casserole dish lightly with spray cooking oil.
  • Place the noodles back in the pot but don't place over heat on the stove. Add marinara sauce and the pasta water to the pot with the noodles and mix well
  • Add the egg, cottage cheese, and one cup of the shredded cheese to the pasta mixture and stir until combined.
  • Pour the pasta mixture in the casserole dish and spread evenly. Sprinkle with the remaining cup of shredded cheese.
  • Place the baking dish in the oven for about 20-25 minutes, or until the cheese is melted and bubbly. Then serve and enjoy!
