Coffee Cake with Streusel Topping

An easy-to-make coffee cake with crispy streusel topping is great for a special breakfast, brunch, or even dessert. It's old fashioned comfort food that is easy to make and so delicious.

Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup butter softened
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons vanilla extract

For the cinnamon streusel topping:

  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ cup butter cold and cut into cubes

Instructions
 

  • Preheat oven to 350 degrees F and grease an 8x8 baking dish with cooking spray.
  • Make the streusel topping
  • In a small mixing bowl, add the sugars, flour and cinnamon and stir together with fork.
  • Add the butter to the flour mixture and press (cut) the butter into the dry ingredients using a fork until it becomes crumbly. Make sure all of the flour is dampened by the butter.
  • In a separate medium mixing bowl, add the flour, sugar, baking powder, salt and cinnamon and stir to combine.
  • Then add the butter and, using a fork again, mashed the butter into the flour mixture until it is thoroughly blended into the dry ingredients.
  • Next, add the egg, milk and vanilla extract and stir with a fork until the flour is just barely mixed in.
  • Pour ½ the batter into the prepared baking dish and top with one cup of the crumb topping.
  • Pour the rest of the batter into the dish and spread gently with a knife to cover the middle crumbles.
  • Then evenly spread the remaining crumbles over the batter.
  • Bake for 35-40 minutes until a toothpick inserted into the center comes out clean.
  • Remove from oven and let cool for 10 minutes before cutting.

Notes

Add chopped nuts to the topping
Add a few chocolate chips or blueberries to the batter.
Use any non-diary milk if preferred.
Store covered with foil or plastic wrap at room temperature for 1-2 days or in an air tight container for 7 days in the refrigerator.
